deserts can't be healthy?!
This one is healthy and yummy.
Bake at 350 degrees for 25 minutes in a 9x13 Pan

Directions: |

Cream together
the butter and sugar. Add Eggs and blend together.
Sift Flour, Soda, and Salt. Add the Flour mixture and
Buttermilk by alternating between the two into the Sugar,
butter, and egg mixture until blended together. Mix in
Rhubarb by hand. Pour into 9x13 inch pan. Mix
together ½ c. sugar and 1 tsp. Cinnamon and sprinkle over top.
Bake at 350 degrees for 25 minutes. You can serve this
cake plain or top with strawberry topping and whipped cream for
dessert.
There are roughly 60 species of rhubarb, but German communities
such as those in Wisconsin cultivated what is commonly know as
plain old garden rhubarb. While the leaves are toxic, the
stalks are commonly used in pies and pastries.

Coletta Ditzman, born 1900 in Green Bay
WI. Married, had 10 kids. Coletta was truly
a remarkable cook. I know a lot of people say
that, but she was the genuine article. She could
cook wild game (we will be putting up a number of her
recipes in her dedication) that didn't taste wild, just
extraordinarily good! Don, her husband hunted and
fished all his life from boyhood and brought the game
home for Coletta to cook. Most people I've met in my
lifetime, would not eat rabbit, squirrel, wild geese,
grouse, fresh caught bass, and the like. When you
mention those things, they cringe a bit. I did myself,
at first, when I was there and it was announced we were
having rabbit stew. To my amazement, when I tried
it, I never in my wildest dreams thought rabbit could be
so good.
Rhubarb was brought to America back in the 1700's, and
most back in the old days, grew a bit in their backyard
garden. Try this recipe for a truly surprising
good tasting and healthy desert. |
